Banana Oat Pancakes

  • 4 whole eggs
  • 2 ripe bananas mashed
  • ½ cup organic oats
  • ¾ cup all purpose organic flour (if using a different type of flour, quantity may vary). For lighter, less dense pancakes, use less flour.
  • ½ teaspoon vanilla all
  • ½ teaspoon baking powder
  • 1 pinch salt
  • 1 cup maple syrup (to serve. Optional)
  • 1 pinch cinnamon (optional)


  • Mash the bananas and mix all ingredients except for maple syrup and cinnamon.
  • Once the mixture is pourable, pour small amount into a greased pan over medium heat. For thin crispy pancakes, use less batter.
  • When bubbles start to form, flip the pancake.
  • Tip: heat up the maple syrup for 30 seconds in a saucepan over low heat just before serving. Sprinkle the cinnamon over the pancakes.
