Greek orzo salad
Ingredients
- 1.5 cups orzo pasta
- 2 cups water
- 1 handful of black olives
- 3-5 tbsp feta cheese
- 1 tbsp olive oil
- ½ a lemon squeezed
- 1 cup diced cucumber (English or field)
- 1 tsp fresh parsley
- 1 can tuna (optional)
- pinch of salt and pepper
Instructions
- Bring 2 cups of salted water to a boil. Add a few drops of olive oil to the water and all of the orzo pasta. Reduce heat to medium. Simmer for 8-10 mins until soft, stirring occasionally.
- Chop up the feta cheese, olives, and cucumber.
- Strain the pasta and empty into a large bowl. Add the feta, olives, and cucumber. Optional: add a can of tuna. Squeeze the lemon juice over everything and sprinkle in the parsley and remaining olive oil. Mix well. Season with a dash of salt and pepper.
