Ingredients
- 4 whole eggs
- 2 ripe bananas mashed
- ½ cup organic oats
- ¾ cup all purpose organic flour (if using a different type of flour, quantity may vary). For lighter, less dense pancakes, use less flour.
- ½ teaspoon vanilla all
- ½ teaspoon baking powder
- 1 pinch salt
- 1 cup maple syrup (to serve. Optional)
- 1 pinch cinnamon (optional)
Instructions
- Mash the bananas and mix all ingredients except for maple syrup and cinnamon.
- Once the mixture is pourable, pour small amount into a greased pan over medium heat. For thin crispy pancakes, use less batter.
- When bubbles start to form, flip the pancake.
- Tip: heat up the maple syrup for 30 seconds in a saucepan over low heat just before serving. Sprinkle the cinnamon over the pancakes.
